Am I missing something here? I absolutely cannot figure out how to earn any XP for my Gotchi.

You aren’t missing something, we’re just in a lull. There will be minigame competitions soon, and I think you’ll earn 10 XP for all your gotchis for attending the raffle party coming up and filling in a typeform, if it’s like previous events.
There are plans being developed for more consistent XP opportunities. The main barrier is making it so that 3rd party minigames can give XP but not be cheatable (game has to be hosted serverside).
